“I eat a balanced diet. I enjoy a vegetable, especially one that I grew myself. I love working with local, sustainable ingredients and being able to trace the sourcing of those ingredients back to someone I know personally. But I also won't compromise on using 100% pure, unadulterated canned SPAM. I treat SPAM like an indulgence and I accept no substitutes. In Hawaii, where I grew up, it is considered an essential. Cans of SPAM fly off supermarket shelves whenever there’s any sort of announcement of a disaster (hurricane, tsunami, you name it). It’s there for me when I need to be transported home in one bite of a SPAM Musubi: a holy trinity of rice, teriyaki SPAM, and seaweed.”
