I was a bit cynical over the past year, but as soon as I began to go out to eat and have fun, I remembered the value of what we do. There's something really special about eating in restaurants that you can't get in your own dining room. But there is so much that needs to change. The next generation weren't taught that they have to put up with this shit, at least not the way we were. They are the people who will revolutionize hospitality."
